CAFÉ ROUGE IS OFFERING THE NEXT IN A SERIES OF BUTCHERY CLASSES:
“THE PIG”

Mac Magruder, organic beef and pig farmer from Potter Valley in Northern California
BUTCHERS: Café Rouge lead butcher, Scott Brennan and executive chef, Rick DeBeaord
DETAILS: Mac Magruder will lead a discussion of his special breed of pork that comes from a cross between European wild boar and Old Spots Pig. Old Spots are recognized as the oldest pedigree spotted pigs in the world.
Scott and Rick will be butchering and cooking fuet sausage, headcheese, slow cooked pork shoulder and porchetta. Wine and tasting of the recipes will be served.
